the answer is B.

Here's why:
A:  Amino acids come together to form POLYPEPTIDES, not polysaccharides.  Amino acids are also the building blocks of PROTEINS, not sugars.

B:  Mono means "one".  Poly means multiple.  Water is a byproduct of the formation of a bond between two monosaccharides.  This is why they call it a condensation reaction (water is produced).  The bonded monosaccharides are now a disaccharide (di meaning "two").  Further condensation reactions result in a polysaccharide, a chain of monosaccharides.

C:  Hrodrolysis = "Water splitting".  In a hydrolysis reaction, water is incorporated into a compound to break a bond.  These reactions use water to make smaller compounds from bigger ones.  Monosaccharides are smaller than polysaccharides, so Choice C doesn't make sense.

D:  There are other monomers for polysaccharides, such as fructose.
