I need an explaination for this reaction:
BaCO3 + HClO3 -----> Ba(ClO3) + CO2 + H2O

My question is: why does CO2 and H2O form instead of H2CO3 or HCO3?

H2CO3 does form, but immediately decomposes into CO2 and H2O at normal pressures.  

Inside a 7-UP bottle with the lid on, you have lots of H2CO3, but as soon as you pop the lid, the pressure drops and the H2CO3 decomposes into CO2 gas, and it starts fizzing.
