Why is it important to know the difference between purchase unit and edible food yield?

▸ Yield will be less, therefore it will affect the outcome of recipe quality

▸ If the purveyor is ethical, there will be no discernible difference

▸ These terms are interchangeable for recipe cost calculation purposes
