I'm not exactly sure, but it has to do with protein structures. Fresh pineapples basically have chemicals that stop the gelatin atoms from joining. Otherwise, they would interlock into a solid. During canning, they might be boiled or given additives, the first having the effect of neutralizing that anti-bonding protein, allowing the gelatin to stick together. Kiwis also have this chemical, and boiling them will also neutralize that protein, allowing the jello to form
