I know that the ratio for Carbohydrates is 1:2:1, but the others seem to be too different to come up with a set ratio. And which compounds can be identified by the ratios alone?

This ratio is usually used to define a carbohydrate.

The typical lipid ratio is about 2 : 1 : 0.05

Proteins: 1 : 6 : 1

Nucleic acids: 1 : 1 : 1

That's because those kinds of molecules vary way too much to give an approximate ratio. A lipid tail will generally be about 1 : 3 : 0, I can tell you that much.
