Most enzymes will only function within a very specific pH range.  Any pH outside that range will destroy the enzyme's function by disrupting its structure.  Pepsin will only function at a pH of about 1.5-2 (in the stomach);  trypsin functions in the duodenum, where the pH is about 8-8.5.

Because if an enzyme is not at the optimum ph then it can begin to denatured and the chemical reaction cannot accur.. 1-6.9 is where ph is on a ph scale. 1 being the strong and 6.9 being weak.
