Many casinos also offer an outlet within the casino that serves a buffet. Moderate in price, the buffet offers a family or group of friends a wide range of selections that appeal to a variety of tastes. Underlying the generous range of food items is the concept of speed; that is, the buffet offers food ready to eat. Because serving of the food is up to the eater, the speed of service can be as quick or slow as necessary. If a gambler wants to eat but does not want to take a lot of time from the tables, this is possible. Or if a player has placed a cup on the seat or the coin slot of the slot machine, they might be concerned some people walking by may not understand this is a reserved place. As a consequence, they may want to eat faster to get back to their hot machine. So, the gambler can enjoy a seated meal yet not take the time that an al a carte order would involve from a full service establishment. Additionally, the food quality of a buffet is usually not as high as that of the full service restaurants.

The concept of a buffet is all you can eat' so the restaurant attempts to control costs by using average cuts of meats (less steak and more chicken and turkey) or prepare less expensive dishes such as macaroni and cheese casseroles, garden salads, pastas, etc. The buffets are often open for all three main meal times (breakfast, lunch, and dinner) but are not generally open all night.

Out of all the possible food venues, the buffet is used most often as a marketing tool to attract the mass-market gambler. One of the most common first comps players receive is the buffet. Because the buffets are already set up, costs are minimal, and volume turnover of the food keeps the food fresh, it is a low priced ticket item to give to players. In addition, because they are priced attractively to generate interest, these low cost meals are intended to draw outside customers for the buffet with the hope that some will stay in the casino to gamble. To facilitate this, the space used by the buffet is typically deeper into the casino play areas than other food service outlets. Customers will have to walk by many slot machine banks and table games before arriving at the buffet restaurant. Of course, upon finishing the meal and leaving, these customers have to walk by the casino play areas again. This double exposure to the casino play areas is intended to entice these customers to stay and play for a while. The goal is to cover the food and labor expenses of the operating the buffet with increased gaming revenues.

Because the lines are usually long at prime dining hours, special lines are added for loyal, player's club members. These lines have signs that specifically say that they are for player's club members of a certain order. First, this makes people who spend a lot of money at the casino feel very special and they are recognized for their efforts. And second, this says to the other people in the long line, you too could be seated quickly if you spent a little more money. A kind of incentive, if you will, to remind people what benefits they could have if they came more often or spent additional money at the tables or slots.

The full service cafs and restaurants offer seated service and a little respite from the noisier casino floor. Usually, the full service cafs and restaurants are co-located with the casino so that (1) the food service outlet is easy to access, and (2) the casino is never far from the guest. The caf and/or restaurant is often not walled-off from the casino floor, creating an open ambiance so that dining patrons can observe the gambling on the casino floor, and be reminded of what gambling opportunities lay just beyond the caf or restaurant. These eateries offer full tableside service and have menus offering a wide range of traditional American fare, full bars for liquor service, or may be specialized by promoting a particular cuisine.

Quite often, you can obtain a quick cup of coffee and doughnut to go or a full sit down breakfast at any time of the day or night. This is nice to know in case the coffee bar has a long line of people first thing in the morning or it is in the middle of the night when the coffee bar is closed. The cafs are modestly priced and target families and the budget gamblers. Many of the full service cafs are open all night to accommodate the late night gambler. The restaurants are higher in price and offer a more sophisticated range of menu items than the fast food operations.
