How can servers handle complaints from guests on the premises (as opposed to those who complain after the fact)?

▸ Listen patiently and respectfully; offer solutions

▸ Go find a manager to take over and tend to others

▸ Apologize and deny wrongdoing so the tip is not affected

▸ Smile and nod; do not accept responsibility or offer anything
