I know that most have their optimum between 37 and 40 degrees Celsius but what is the highest temperature that any enzyme can withstand and which enzyme is it?

Not sure but around 104 or 5 Fahrenheit, so that is about 40or 40.5555 Celcius Slight Smile

Look up enzymes found in thermophiles.  There is some enzyme they use in PCR that comes from a bacteria that lives in mid ocean heat vents, but for the love of me I can't remember what it is called.

mairdo: Taq polymerases are what those enzymes are called, and they can stand the 95C of a typical PCR reaction. But in my humble opinion, RNases are the most hardy enzymes around. Some of them can withstand *two* autoclavings (121C), as anyone who has ever worked with RNA will tell you.
