We did a lab experiment is microbiology yesterday to estimate the number of streptomycin resistant mutants in a bacterial population. One of the questions on the worksheet is "Why were the samples plated form both ends of the dilution series?"

I am not completely sure, since I do not know the exact setup of the experiment.

I would guess that you probably did not really know how many bacteria to expect in each dilution, so therefore you need to plate out the whole dilution series. Some dilutions will be too concentrated (too many bacteria on the plates), others will be too dilute (few or no bacteria), but somewhere in the middle you should hit a good dilution that yields a nice, countable number.
